iPhone4 Restore

So I dropped my iPhone4, the case didn’t protect it (Apple genius suggests a rubberish case, makes sense).
I got a crack in the front from the top to the button at the bottom.
Took it to Apple, guy said since it was my first time there, he would waive the cost ($199).
He wiped my old phone and gave me a brand new one with my phone number attached to it.

1. I backed up my phone before I went there.
2. I copied all my photos/movies off. Luckily because the backup does not contain these…
3. I’m worried about my voice memo’s…those had better be in the backup.
4. Clearly my iPhone was NOT storing my contacts in google as I told it to. After setting up my new phone, I have 72 contacts instead of 600+

So now begins: How to restore my phone?
I could simply plug it in and let itunes do its thing, but I don’t believe that would get me to where I want to be.

    So, now that I’m not working 87 hours and only sleeping 24 (in one week)
    let’s see if I can pose my question a little more intelligently.
    I have a new iPhone4 that I’ve been using w/o restoring it.
    I want to get everything off of it and restore it with my backup from
    4/22/2011 (previous iPhone4 which was dropped and cracked the front
    glass).
    When I plug in my current iPhone4, iTunes asks me:
    Setting up your iPhone
    Setup as New iPhone – I’m tempted to do this since I’m concerned my backup has a corrupt or bad settings.
    Restore from Backup – I assume this would wipe out what I currently have.
    Ha, when I left iTunes look at the Pref/Devices (backups), I was
    able to get a prompt to copy my images off! Before, it did not
    show up as a device in win xplorer for me to copy stuff from.
    So, 1 step done: images saved.
    Next: Voice Memo’s

    Contacts: All should be in Google/exchange.
    Calendar: All should be in Google/exchange.
    Phones: Copied off
    Notes: These can be wiped, no worry
    Apps: Obviously those will download no problem.
    iBooks: Those should download no problem, right?
    Messages (txt): None worth saving (everything should go to Google voice)

    So I guess just the voice memo’s. Hrm, seems I only have 5. I could
    just email them to myself. Cept it looses all the meta data.
    Unless someone has a good idea, I guess I’ll just email them and
    take the meta data loss.
